Vegetarian Fajitas

Inspired Life with Jess || Vegetarian Fajitas

I’ve been wanting to try more vegetarian meals lately, and since I love Mexican food so much, I decided to combine the two to make vegetarian fajitas. This is a great clean-out-the-fridge recipe, since you can use pretty much any vegetables to add make the filling, too, so great at the end of the week!

Inspired Life with Jess || Vegetarian Fajitas

Ingredients

1 tablespoon olive oil
3 zucchini
1 brown onion
3 carrots
1/2 red capsicum
1/2 green capsicum
1 chilli
5 mushrooms
2 tablespoons garlic
2 tablespoons Middle Eastern spice
2 x 400g cans five bean mix
400g can crushed tomatoes
1 cup vegetable stock
Packet of tortillas
1 cup cheese
Fresh coriander
1/4 cup tomato salsa

Method

  1. Chop all of the vegetable and rinse the beansInspired Life with Jess || Vegetarian Fajitas
  2. Heat the oil on medium and add the onion, zucchini, carrot, capsicum, chilli and mushroom. Cook for 5 minutes
  3. Add the Middle Eastern Spice and stir through on high for about 1 minutes, before adding the beans, tomatoes and stock
  4. Bring to the boil, then simmer uncovered for 10 minutes
  5. Heat the tortillas following the directions, then serve with the filling in the warm tortillas and top with grated cheese, coriander and salsa, then fold over to eatInspired Life with Jess || Vegetarian Fajitas
Side note: These also make amazing nachos!
