27 Recipes – Slow Cooker Mexican Ham Soup

27 Recipes - Mexican Ham Soup || Inspired Life with JessIt is cold and wintery here in Australia. Perfect soup weather, really! So when I saw a soup recipe combining ham and Mexican spiciness, I just had to try it!

27 Recipes - Mexican Ham Soup || Inspired Life with JessIngredients

1 red onion
2t garlic
2 celery stalks
1 red capsicum
1t Mexican chilli powder
400g can chopped tomatoes
1L chicken stock
1kg ham hocks
400g can red kidney beans
Corn chips and sour cream to serve

Method

  1. Chop the red onion, celery and capsicum, and rinse the kidney beans27 Recipes - Mexican Ham Soup || Inspired Life with Jess
  2. Place all ingredients into the slow cooker except for the kidney beans27 Recipes - Mexican Ham Soup || Inspired Life with Jess
  3. Cook on the low setting for 6 hours, until the meat is falling off the bones27 Recipes - Mexican Ham Soup || Inspired Life with Jess
  4. Take the meat out of the slow cooker and discard the bones and rind, then shred with a fork
  5. Add the meat back into the slow cooker along with the kidney beans and cook for a further 30 minutes
  6. Serve with corn chips and sour cream

My Thoughts

I loved this! It has a nice level of spice without being over the top, and is perfect for a cold night!

Michael’s Thoughts

He thought it tasted awesome, and loved the spices and veggies, but isn’t the biggest fan of the ham. He thinks the spiciness of this would be more suited to a minnestrone.
