27 Recipes - Chicken Tikka MasalaIt’s no secret that we love Indian food in our place. It’s second only to Thai food here! I’ve never liked any of the mixes we get from the jars though, so I’ve been keeping an eye out for some good recipes for some of our favourite Indian meals. This time, we decided to try chicken tikka masala.

27 Recipes - Chicken Tikka Masala Ingredients

Ingredients – Marinade

1 cup fresh yogurt
1 cup fresh coriander
2 T ginger
3 T garlic
4T garam masala
6 peppercorns
3T lemon juice
1kg chicken

Ingredients – Gravy

2 onions
6 t garlic
1 t cardamom
400g tin tomatoes
2 T garam masala
2 t brown sugar
1 cup thickened cream
3 T almonds
Vegetable oil

Method

  1. Make the marinade by blending the coriander, ginger, garlic, garam masala, peppercorns and lemon juice to a smooth paste, then mix in the yogurt. Once well mixed, add the chopped chicken, cover and refrigerate overnight.27-Recipes-Chicken-Tikka-Masala-Marinade
  2. Preheat the oven to 200ºC and roast the marinade chicken in single layer on an oven tray until browned on all sides. If you keep the oven open while doing this, they will be tender but the marinade will cook in better27-Recipes-Chicken-Tikka-Masala-2
  3. To make the gravy, heat a little oil in a frypan on medium, and cook the chopped onion until soft. Add the cardamon and garlic and fry for 2-3 minutes, then add the garam masala, brown sugar, tomatoes, ground almonds and cream, and cook until it forms a paste. 27-Recipes-Chicken-Tikka-Masala-Gravy
  4. Add the grilled chicken pieces to the gravy and cook for 10 minutes. Serve hot with naans or rice27-Recipes-Chicken-Tikka-Masala-3

My Thoughts

This is my favourite Indian recipe I have tried so far, but it’s a lot more labour intensive than I like for my every day meals. It wasn’t as orangey as the sore brought versions look, but I didn’t add any food colouring that was on the ingredients list. The chicken melts in your mouth, too!
