27 Recipes – Green Curry

I’ve attempted green curry once before but never well. I attempted again on New Years Eve since I was craving it, and this time, it turned out amazing! Therefore, I am including it as one of my 27 recipes, since I made a few changes to get to this version.

Green Curry Paste

10 large green chillies
2t galangal
4 Chinese spoons of lemongrass
6 kaffir lime leaves finely
4 Chinese spoons of garlic
3 onion shallots
1t salt
2T dried basil
4 Chinese spoons oil

Chop all ingredients and crush everything but the oil in a mortar and pestle. Add the oil at the end and be careful not the splash as you mix it through

Green Curry Ingredients

500g chicken sliced
400ml coconut milk
400ml water
2 Chinese spoon vegetable oil
4 Chinese spoon green curry paste
8 Chinese spoons fish sauce
3 Chinese spoon sugar
4 handful green beans
Kaffir lime leaves for garnish

Green Curry Method

  1. At a low heat in a pot, add the oil and curry paste and mix well
  2. Add in chicken and stir until half cooked27-Recipes-Green-Curry-2
  3. Add the coconut milk along with the fish sauce and sugar
  4. Mix well, then add the water and green beans and bring back to the boil for a few minutes until the beans are done27-Recipes-Green-Curry-3
  5. Pour into a bowl and garnish with kaffir lime leaves

My ThoughtsThis turned out amazing! I served this with jasmine rice and loved how it turned out. There is enough green curry paste left to do at least one more batch as well. Next time, I would make it slightly hotter, with about one more Chinese spoon of curry paste. This amount made about 6 portions

Michael’s ThoughtsHe thought this was awesome but agrees it needed a little more spice. He also thought it should be a little thicker to make it a 10/10 (but keep in mind this is actually a soup recipe)………………………………………………………………………………………………………………..
