27 Recipes – Cheesy Meatballs



1kg beef mince
1 onion
2 eggs
1 1/3 cups breadcrumbs
100-200g tasty cheese
2 tablespoons olive oil
2 tablespoons dried basil
4 stalks celery
2 carrots
2 zucchini
1200g cans of crushed tomatoes
1/2 cup tomato paste
2 teaspoons beef stock powder
Pasta to serve



  1. Cut the cheese into 1cm cubes
  2. Chop the onion and celery and grate the carrot and zucchini. Beat the eggs
  3. Combine the mince, onion, basil, egg and breadcrumbs in a bowl and season with salt and pepper if desired
  4. Shape the meatballs into balls of approximately 1 tablespoon of meat, and place a cube of cheese in the middle of each
  5. Heat half the oil in a frypan over medium heat and cook the meatballs in batches until browned (approximately 3-4 minutes). Remove from the pan and cover in foilMeatballs
  6. Heat the remaining oil and add the celery, carrot and zucchini. Cook for approximately 5 minutes until the celery starts to softenSauce
  7. Add tomato, tomato paste, stock powder and 2 cups of water
  8. Bring to the boil, reduce the heat to low, and simmer covered for about 30 minutes until the sauce has thickened
  9. Add the meatballs and simmer for a further 5-7 minutes or until the meatballs are cooked through
  10. Serve on top of pasta

My Thoughts

These turned out ok, but I doubt I’ll use cheese in the middle of the meatballs again, since you couldn’t really taste it. I’m not a fan of fettuccine, and would prefer this with something like spirals too. This was even better the next day, and was especially good with lots of the vegetable sauce. Next time I’ll add a little Worcestershire sauce to the meatballs before cooking, and I’ll only make a batch half this size because it took forever to cook all the meatball batches. This freezes really well though, and this size portion made us about 14 servings!

Michael’s Thoughts

He agreed this is better the next day and to not use cheese in the middle of the meatballs, as it’s better with a little cheese sprinkled on top in his opinion. He also thinks more pepper should be used in the meatballs.
